Char Blue Premium Ceasar blend
Chef Jeffrey Young of Young Culinary Concepts Catering is putting his own spin on the salt rim by releasing his Char Blue Premium Caesar spice blend.
Caesar’s keep getting more elaborate, The simple celery stick was replaced by the spicy bean ages ago, but now you can get anything from pickled vegetables to pepperoni sticks to freakish little hamburgers served on a stick bobbing in your Clamato. What’s lost in these Frankenstein versions of Canada’s favourite hangover cure is the modest and undervalued spice rim.
Young’s spice blend makes the rim a main feature again. It’s potent, with ingredients like juniper berries, coriander, paprika, cayenne, cinnamon and oregano. In fact, celery seed is one of the last ingredients on the list.
At first sip, the fruity juniper berries come through, followed by a hit of the spice from the chilli and cayenne, then finishes on a herbal note with the slightly bitter oregano.
It’s a Caesar blend for the refined pallet. For those who drank a fine bottle of BC wine – or two – on Saturday and want a well spiced Caesar – and fresh squeezed orange juice, artisan americano and a glass of sparkling water, followed by a shameful can of Coca Cola – to cure their hangover.
