The Pacific Institute of Culinary Arts (PICA) has been a prolific educational institute for chefs in Vancouver and beyond. It has recently gone through an ownership change with chef and entrepreneur, Yves Potvin – of Yves Veggie Cuisine fame – taking the helm of the institute about a year ago. 

The school is undergoing a makeover, including a new patio, a few coats of paint in their attached restaurant and a renewed focus on casual culinary classes for the curious foodie.

Small Batch spent a Saturday at PICA making croissants and danishes with chef and instructor Carleigh Kage. Her class walked through the steps of making laminated dough from start to finish, shifting from live demonstrations to allowing students to get their own hands covered in dough.
